You might think that a recipe this easy couldn’t possibly be five-star. You’d be wrong. If you make this and serve it warm right from the oven, you might even think this is the best cobbler you’ve ever tasted.

You might also be tempted to add cinnamon or other seasonings. Don’t. The amount of sugar with the fruit and cake-like crust works perfectly. The key is the butter that melts in the bottom of tbe pan before you add the batter. It is similar to Dutch Baby pancakes. The heat and fat cause the batter to rise around the fruit baking into a delicious cakey crust.

For the photo I used a ripe summer peach, plum, strawberries and blueberries. The recipe calls for 2 to 2 1/2 cups of fruit. You mayl be tempted to add more. Don’t. If you add more fruit you will have too much liquid and the cobbler won’t set up. Although I haven’t tried it, I think you can multiply the recipe 1 1/2 times and bake it in a 9-inch square pan. Easiest Fruit Cobbler Ever
4 tablespoons butter
3/4 cup (115 grams) all-purpose flour
3/4 cup (154 grams) sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 to 2 1/2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar
Whipped Cream or ice cream for serving

1. Preheat the oven to 375 degrees F. Adjust the oven rack to the upper-middle position.
2.  Put butter in an 8-inch square or 9-inch round pan; place in the oven until butter is melted. Remove the pan from the oven and set aside 
3.Whisk flour, 3/4 cup sugar, baking powder, and salt in a medium bowl. Whisk in milk until a smooth batter forms.
 4. Pour batter into the prepared pan with melted butter
5.Scatter fruit over batter. Sprinkle with 1 tablespoon sugar.
6.Bake in the preheated oven until the top is lightly browned and fruit bubbles, 45 to 55 minutes.
7.  Serve warm or at room temperature with whipped cream or ice cream.

 Makes 4 to 5 servings ( 2 in my house.)

 To prepare ahead: Cobbler is best served warm right after it’s baked. It is fine held at room temperature for several hours and rewarmed.
